For example, fresh meat can go from 2–4 days to 5–10 days in the fridge, fresh fish from 1–2 days to 2–5 days, and cured cheese from 1–2 weeks to 3–6 weeks. In the freezer, meat and fish can remain in good condition for several months. Even so, vacuum packaging does not make food last indefinitely: the actual shelf life depends on the type of product, the storage temperature, whether the seal is correct and whether the food was fresh before being vacuum-packed.
How long do vacuum-packed foods last depending on where they are stored?

How long do vacuum-packed foods last depending on where they are stored?

The shelf life of vacuum-packed foods is not the same in every case, as it depends both on the type of product and on where it is stored. In general, refrigeration allows fresh or cooked foods to be kept for longer, the freezer is the most effective option for extending shelf life for months, and pantry storage is only suitable for very specific products and only when storage conditions are appropriate.

Food

Not vacuum packed

Vacuum packed in fridge

Vacuum packed in freezer

Vacuum packed in pantry

Fresh red meat

2-4 days

5-10 days

6-12 months

Not recommended

Fresh minced meat

1-2 days

2-4 days

3-4 months

Not recommended

Cooked meat

3-4 days

5-7 days

2-3 months

Not recommended

Raw poultry

1-2 days

3-5 days

6-9 months

Not recommended

Fresh fish

1-2 days

2-5 days

3-6 months

Not recommended

Cooked seafood

1-2 days

2-4 days

2-3 months

Not recommended

Whole cured sausages

1-2 weeks

3-6 weeks

1-2 months

1-2 weeks

Sliced cold cuts

3-5 days

5-10 days

1-2 months

Not recommended

Cured cheeses

1-2 weeks

3-6 weeks

4-6 months

5-7 days

Soft cheeses

3-5 days

1-2 weeks

1-2 months

Not recommended

Cooked / ready-made meals

2-3 days

3-7 days

2-3 months

Not recommended

Cooked rice and pasta

2-3 days

3-5 days

1-2 months

Not recommended

Purées and soups

2-3 days

3-5 days

2-3 months

Not recommended

Blanched vegetables

2-4 days

7-14 days

8-12 months

Not recommended

Cut fruit

2-4 days

3-7 days

6-12 months

Not recommended

Nuts and dry snacks

2-4 weeks

1-2 months

6-12 months

1-3 months

Factors that affect how long vacuum-packed foods last

Although vacuum packaging helps extend the shelf life of many foods, their actual durability does not depend on the packaging alone. There are several factors that directly influence how long they stay in good condition, from the type of product to the storage temperature or the quality of the seal.

For this reason, to really make the most of the advantages of vacuum packaging, it is important to understand what can extend a food’s shelf life and what can shorten it.

Factor

Cómo influye en la duración

Type of food

Not all foods last the same amount of time, even when vacuum packed. Fresh and highly perishable products, such as fish or minced meat, have a shorter shelf life than cured or cooked food, or those with lower moisture.

Storage temperature

Keeping the product at the right temperature is essential. Vacuum packaging does not replace refrigeration or freezing, but complements them. Poorly stored food will lose quality and safety much sooner, even if it is vacuum packed.

Quality of the vacuum packaging

A good vacuum and a proper seal help reduce the presence of oxygen and better protect the food. If the bag does not seal properly, air gets in or the packaging is not suitable, shelf life is reduced.

Initial condition of the food

Vacuum packaging does not improve food that was already deteriorating. The fresher and better the product is before packaging, the longer it will last afterwards.

Type of food

The type of food has a much greater impact on shelf life than the mere fact of vacuum packing it. Minced meat does not last the same as cured cheese, because they do not have the same moisture level, microbial load or degree of stability. For example, fresh fish or minced meat are still very delicate products and, even when vacuum packed, their refrigerated shelf life remains short.

By contrast, foods such as cured sausages, cured cheeses or nuts keep much better because they contain less available water and are less susceptible to rapid spoilage. That is why it is not possible to give a single general shelf-life estimate for all vacuum-packed food: the first thing to consider is what type of food it is.

Storage temperature

Temperature completely changes how long a vacuum-packed food can last. Fresh meat kept in the fridge may remain in good condition for several days, but if that same piece is frozen, its shelf life can be extended for months. The same applies to fish, cooked meals or vegetables: vacuum packaging helps, but the real difference depends on where they are stored afterwards.

The fridge is suitable for short- to medium-term storage; the freezer is the best option if the food is not going to be consumed soon; and pantry storage only makes sense for very specific products, such as some cured foods or dry goods. For perishable products, vacuum packing and then leaving them without refrigeration does not compensate for poor conservation.

Quality of vacuum packaging

It is not enough to simply “seal the bag”: the vacuum process has to be done properly. If air remains inside, if the seal is incomplete or if the bag is not suitable, shelf life is reduced and the food is less protected. For example, a poorly sealed bag can cause meat or fish to lose preservation much sooner than expected, even if they appear to be vacuum packed.

Using a bag that is too thin, not durable enough or unsuitable for that type of product also affects the result. The cleaner, more stable and more airtight the packaging is, the better the outcome will be. In other words, a good vacuum is not just about removing air, but about keeping the food properly isolated until it is consumed.

Discover our professional vacuum packaging machines

Preserve food for longer, reduce waste and improve organisation in your kitchen or business with Zermat vacuum packaging solutions. The same applies to overripe fruit, fish that is are not at their best or leftovers that have not been cooled properly.

The best results are achieved when the food is vacuum packed while it is still fresh or just prepared, and has alredy been properly cooled if refrigeration is needed. Vacuum packaging helps preserve food better, but it always starts from the condition the product was in before the bag was sealed.

Which foods last longer when vacuum packed

Some foods keep especially well when vacuum packed because they tolerate storage better over time and lose less quality while being stored. The ones that usually give the best results include the following:

Cured sausages, such as chorizo, salchichón or cured loin, because they are more stable products with lower moisture content.

Cured and semi-cured cheeses, which keep better than soft cheeses.

Ham and cured cuts, both whole and portioned, as vacuum packaging helps protect them from air and oxidation.

Nuts, because they are less likely to go rancid and retain their flavor better when properly isolated.

Frozen meats, which keep their quality better and suffer less from freezer burn.

Frozen fish, as vacuum packaging helps protect its texture and reduces deterioration during freezing.

Blanched and frozen vegetables, which usually keep better if they are prepared before packaging.

Properly refrigerated or frozen cooked meals, as long as they have been cooled correctly before vacuum packing.

Which foods are not suitable for vacuum packing

Although vacuum packaging is a very useful technique, not all foods are suitable for this type of preservation. Some products may spoil quickly, lose their texture or require other specific storage conditions. There are also foods which, because of their composition or condition, do not give good results when vacuum packed unless they are handled properly:

Fresh mushrooms

Raw garlic and onions

Newly cooked foods that are still hot

Very delicate leafy vegetables

Very crunchy foods if you want to preserve their texture

Fermented products

Foods with excess liquid if they are not packaged correctly

Products that already show signs of spoilage

Tips for better preserving vacuum-packed food

To preserve vacuum-packed food more effectively, it is advisable to follow some basic guidelines before and after packaging:

Always vacuum-pack food that is fresh and in good condition

Allow cooked food to cool before vacuum packaging

Use bags suitable for vacuum packaging

Ensure a secure seal with no leaks

Label each package with the packaging date

Maintain the cold chain whenever necessary

Store food in the refrigerator or freezer according to the type of product

Check the product’s appearance and smell before consumption

Vacuum-packed food can last significantly longer than food stored conventionally.
